Mini Gluten Free Eggnog Donuts


These festive, gluten free donuts are perfect for Christmas and all winter long. They have comforting flavour and will fill you with warmth. Mini Gluten Free Eggnog Donuts are small enough that you can enjoy one guilt free, if you can stop after just one! They have a the texture of a cake doughnut with a chewy inside but are baked instead of fried. These donuts freeze well and make the perfect snack, dessert, or addition to your Christmas breakfast.


One of my favourite parts of the holiday season is all the wonderful smells. The outdoors smell like fresh pine and snow, while the malls smell like cinnamon and vanilla, while many houses smell like fresh baking. Eggnog has comforting flavour and smell. Nutmeg is warming on a cold winter day and is a staple of Christmas holidays. Normally it is best enjoyed with rum, or brandy but I like putting it in anything I can. It makes a great replacement for cream in coffee, and is great in all types of baking!  I have spoken to many people who don't like eggnog because of its thick and frothy texture, but when your putting it in baking your getting its rich flavour instead. And when you place it in baking you can enjoy a glass of rum on the side without having to dilute it!

Last year I made Gluten Free Gingerbread Eggnog Donuts for Christmas, however these eggnog donuts have better texture and flavour! They are crunchy on the outside and chewy on the inside, much like a cake donut. I love donuts at Christmas time. My grandma always made fried donuts that were perfect when they were hot on the outside, still a little frozen on the inside and rolled in icing sugar. Since being diagnosed with Celiacs I haven't been able to enjoy one of my Granny's fried pieces of heaven, but I still try to satisfy my donut craving. I am working on a good fried recipe, but these baked ones are good enough to fill my donut void. These donuts are really easy and quick to make, even the glaze takes minimal time! They freeze well so they can be made in advance and pulled out when you are ready to enjoy or have unexpected company. I use a baby cakes donut maker because they are quick and easy, but you can also bake these donuts in the oven in a donut pan or mini muffin tins.



Mini Gluten Free Eggnog Donuts

1/4 Cup Margarine
1/4 Cup Brown Sugar
1 Egg
1/2 Cup Egg Nog
1 Cup Gluten Free 1:1 Flour
1/2 Tsp Baking Powder
1/2 Tsp Baking Soda
1/2 Tsp Nutmeg
1 Tsp Corn Starch
1/4 Tsp Cinnamon

- Mix together first four ingredients.
- Add in remaining ingredients and mix until combined
- Place batter in a zip lock bag and cut off corner, pipe into donut maker or donut trays.
- If using donut maker (Such as BabyCakes) cook for approx 6 Minutes, If using donut trays bake at 350 degrees for 15-18 minutes or until golden brown and a toothpick can be inserted and removed cleanly. 


Eggnog Glaze

1/2 Cup Icing Sugar
2 Tbsp Egg Nog
1 Tbsp Butter 
Dash of Nutmeg
- Combine together, and dip donuts into glaze, let dry on parchment paper for 3-5 minutes before drizzling with chocolate. 


Chocolate Drizzle

1 Tbsp Butter
1/8 Cup Milk
1/2 Cup Chocolate Chips

-Melt all ingredients together over the stove.
-Let cool for a few minutes and pour into a ziplock bag. Cut a small corner off and drizzle over Donuts.

These donuts can be topped with your favourite donut toppings or enjoyed as a traditional waffle. They are the perfect size for dipping in syrup or jam! Raspberry Vanilla Waffle Donuts are the perfect treat for any occasion and will not disappoint!

I always forget about the days devoted to my favourite indulgences until I wake up and scroll through my Instagram feed! Sometimes I get instantly excited and run out to get whatever that day is devoted to, and other times I forget about it just as quickly as I was reminded of it! Donuts are one of the biggest things I miss since being diagnosed with Celiacs. Road trips are not the same without a box of tim bits, and holidays are not the same without Grandmas homemade, deep fried donuts. I have made a few different types of donuts in the past. But today, I decided to make a fusion donut with my favourite breakfast food! Lately I have been craving waffles and pancakes, I think because I really love the syrup that I excessively cover them in. So why not make waffles into donuts and indulge? I like to believe that this makes it acceptable to have donuts for every meal of the day. Thats what donut day is about right?


Raspberry Vanilla Waffle Donuts are thicker than a waffle, and flatter than a donut. But they still have great flavour and texture! They can be topped with your favourite donut toppings, or enjoyed as a traditional waffle with fruit and syrup! They are great for dipping and are a delicious treat. These donuts are easy to make, and even easier to eat! They remain a little chewy when cooked. This reminded me of a honey crueller, which in my opinion is the best kind of donut! If this isn't for you, leave the donuts in the waffle press for a bit longer.


Gluten Free Raspberry Vanilla Waffle Donuts




1 Cup All Purpose Gluten Free Flour
1 Tsp Baking Powder
1 Tsp Xanthan Gum
1 Cup Almond Milk
2 Eggs
1 Tbsp Oil
1 Tsp Vanilla
1/2 Cup Fresh Raspberries


Mix all ingredients together. Using a waffle iron place an eighth of a cup of batter in the centre of each waffle and cook until done. Approx 4-5 Minutes. Top as desired. 

Chocolate topping

1 Cup Chocolate Chips
1 Tbsp Margarine

Icing Glaze

1 Cup Icing Sugar
2 Tbsp Almond Milk

Gluten Free Gingerbread Eggnog Donuts


Gluten Free Gingerbread Eggnog Donuts have a gingerbread base, with a delicious eggnog glaze! They are full of winter flavours and make the perfect snack or breakfast on Christmas morning! They have the texture of a cake donut, and are perfect for the Celiac in your home! 

Day 4: 12 Days of Gluten Free Christmas Baking 


Did someone say donuts? Oh that was me! I always run at the sound of donuts, especially the gluten free kind which are hard to come by! With a donut maker or mini donut pan, donuts can be enjoyed in minutes! They are really easy to make, and satisfy the craving for something sweet! Earlier this fall I made some wonderful Gluten Free Pumpkin Spice Donuts. They had amazing flavour and texture so I thought I would adapt the recipe and make a Christmas themed donut. These Gingerbread Eggnog donuts did not disappoint! They have all the bold flavours of winter and are perfect for Christmas morning breakfast! The batter can be used for waffles as well. They are glazed with an eggnog sugar icing and will fulfill your craving for a sweet, sugary donut!

Gluten Free Gingerbread Eggnog Donuts

1 Egg
1 Tbsp Coconut Oil
1/2 Cup Brown Sugar
1 Cup All Purpose Gluten Free Flour
1/8 Cup Molasses
1/2 Tsp Cinnamon
1/2 Tsp Cloves
1/2 Tsp Ginger
1 Tsp Xantham Gum
1/2 Tsp Baking Powder
1/2 Tsp Baking Soda
1/2 Cup Egg Nog

Glaze

1 Cup Icing Sugar
1 Tbsp Egg Nog
1 Tbsp Rum 
Nutmeg





Beat together Egg, Oil, and Sugar. 
Beat in Flour and Spices.
Add Molasses and Egg Nog towards the end. 
Pipe into donut maker or mini donut pans.
If using donut pans bake at 350 degrees for 7-10 minutes
Let cool on wire racks.
Dip in Glaze, and cover in sprinkles. 



Christmas is about enjoyment and it is a time when it is acceptable to indulge in all the sweet treats you avoid the rest of the year! Even the individuals with Celiac Disease, or a gluten intolerance should be able to indulge in foods that they can no longer enjoy, instead of sitting back and watching everyone else. It can be a hard time of the year for people with intolerances. However, with the 12 Days of Gluten Free Christmas Baking I hope you can find some enjoyment in holiday goodies this year!

Gluten-Free Pumpkin Spice Donuts

These gluten free mini donuts have the texture of a cake donut and are perfectly spiced for the holiday season! They are quick to make and even quicker to eat!

October is finally here! Summer may be over, but fall is in full swing. This means apple ciders, pumpkin spice lattes, searching the pumpkin patch for the best jack-o-lantern, corn mazes, cozy scarves, jumping in leaves, and a Thanksgiving feast. October starts with a bang, and ends with a great Halloween bash. It is my favourite month for so many reasons. It is a time to reflect on the past summer months, and start planning how to reach the goals that have been put on hold. It is a time to remember that the small daily successes are just as important as the bigger ones. Every time I see the leaves change colour, or the fog roll out of the valley, I am reminded of the beauty of life and I am inspired to live life to its fullest.


The newest craze is pumpkin spice everything! Thanks to Starbucks and their pumpkin spice latte, pumpkin spice is appearing everywhere - and it is a bandwagon I am jumping onto. I love pumpkin pie, pumpkin spice, and everything pumpkin! Todays baking was inspired by a bottle of  the Blackberry Patch Pumpkin Spice Syrup I found at Winners! It has great flavour, and is a wonderful change from the usual maple syrup. I want to put it in, and on everything possible this season!

Thanksgiving is coming up very quickly, and I thought mini donuts would be a great change from the traditional pumpkin pie! I love donuts, my Grandma used to make the best fried donuts that were perfect when warmed up and covered in endless amounts of powdered sugar. Sadly, since being diagnosed with Celiac Disease, my days of Grandmas donuts are long gone. Lately I have been craving donuts, and every moment spent in the Tim Hortons line at school makes it a little worse. I decided to try making gluten free donuts. Since I always take a task head on I decided to start BIG and make gluten free pumpkin donuts with a chocolate pumpkin spice glaze, and a pumpkin spice honey glaze. These mini donuts are the perfect alternative for people want a change from tradition, they also make a great breakfast, or snack. The batter can be used to make waffles and pancakes as well.


Gluten-Free Pumpkin Spice Donuts

1 Cup Pumpkin Puree
2 Eggs
1 ½ Cup All Purpose Gluten Free Flour
¼ Cup Coconut Flour
1 Tbsp Coconut Oil
2 Tsp Pumpkin Spice
1 Tsp Xantham Gum
2 Tsp Baking Powder
½ Cup Brown Sugar
½ Cup Almond Milk

- Combine Pumpkin Puree, Eggs, Coconut Oil, and Almond Milk until smooth. 
- In another bowl combine all dry ingredients.
- Slowly add dry ingredients into mixer, and mix until smooth.
- Pipe into donut moulds so they are full. The donuts do not rise very much.
- I used a Donut Maker and let them bake for 3 Minutes. If you do not have a donut maker bake at 350 degrees for 10-12 Minutes.
-Place on wire racks to let cool. Once cooled, trim excess dough off the sides and glaze with your choice of glaze. I used Maple Glaze, and a Chocolate Pumpkin Spice Glaze.
                    Makes 18 Mini Donuts


Maple Glaze

1/8 Cup Icing Sugar
1 Tbsp Pumpkin Spice Syrup
1 Tbsp Honey
1 Tbsp Almond Milk

-Combine all ingredients together until smooth and fully dip donuts. Place on wire racks to allow excess to drip off.


Chocolate Pumpkin Spice Glaze

1 Tbsp Margarine
1/3 Cup Semi-Sweet Chocolate Chips

2 Tbsp Pumpkin Spice Syrup

- melt margarine in a sauce pan and add chocolate chips, stirring constantly until melted. Add syrup and stir until mixed. Dip donuts in on one side, and place on wire racks to cool. 




Thanksgiving offers a time to catch up with family and friends, and enjoy each others company. It is a time to give thanks for all of life's blessings. Thanksgiving is a reminder that nothing in life should be taken for granted.  This year I have so much to the thankful for and am so grateful for everyone in my life. I hope the next weeks bring everyone health and happiness. I hope those goals are within reach, and that life's possibilities are at your fingertips.
